Single fields need to be dropped because they are incompatible. We can opt to
introduce this concept in 0.9. Pretty much all formats assume one buffer to be
one frame. Interlace, -mode and field-order sound fine and are compatible, I think.

You asked for an interlaced videosink, one such is v4lmjpegsink.

Like Maciej says, sequential/interleaved don't have to be strings, enums is
fine. Or even ints with macros.
