You can do that using GStreamer, but it involves re-encoding the video, since
you need to decode it, then overlay the subtitle text as bitmap onto the video
(using the 'textoverlay' element), and then encode it again.

This seems more of a GStreamer usage question to me than a bug report/feature
request (please re-open if I misunderstood you).
