Could you please install the following packages:

 * gstreamer0.10-plugins-base-dbg
 * libgstreamer0.10-0-dbg

with

 $ sudo apt-get install gstreamer0.10-plugins-base-dbg libgstreamer0.10-0-dbg

(or the package manager) and try to reproduce the problem?

Also, could you start  gnome-volume-control  from the command line to see if
there any warning messages printed?
