Thanks for the summary.  It's a bit hard to change certain things in the
plugin, like default values and sink caps, since we need to maintain a certain
degree of backwards compatibility.

However, what could easily be done is to add, say, new lamemp3enc and
lamemp2enc elements with new/cleaned up options and other sink caps.
