the reference to the pipeline gets dropped when you exit that function, since
only you have a reference to it. Once you exit the function, the only reference
to the pipeline will be dropped, and it will be freed.

Keep a reference to the pipeline, and everything will work correctly.

for example do this at the beginning:

pipeline = None
def playStream ():
        global pipeline
        pipeline = gst.Pipeline()
        ...
