Ok, just tested with everything up-to-date, the issue is not solved with latest
git versions of everything. Encodebin simply does not seem to want to deal with
anything which has stream format set to 'avc', so it needs to be fixed be able
to use it as a valid format and plug the h264 parser as needed.
