Not much, could you rebuild your gstreamer with support for printf extensions
(which should be the default when building against glibc, assuming glib is
built properly) or build latest git master? That way the logs will contain the
actual caps.

videoscale/videoconvert can output. Especially it looks like it does not
support anything at all:
