For Ogg, the HTML spec says specifically that we should use the Role header:
> For Ogg files, the Role header field of the track gives the relevant metadata.

I'm trying to figure out what it should be set to when it's not obvious (What
does "text/karaoke" map to, for example?), but most of them are straightforward
("video/sign" maps to "sign", "text/caption" maps to "captions").
