BBB's matroska muxer plugin should work for the creation of MKV's 
already, but we recently found a couple of bugs in it. Before using it 
for a final backup file, i recommend to wait until then.

As for a MP4 muxer plugin, i have no idea if there is any work being 
done on this. AVI muxer should not be usable for this as there is no 
clean way to put AAC audio ( VBR ) into AVI, the only program doing that 
( quite insane IMO ;) ) is avi-ux GUI, and the files are not editable in 
any other AVI handling app i know of.

Is there a MOV muxer plugin for Gstreamer already ?
