You seem to be confusing "GStreamer version" with "plugins you have installed".

That message is pretty clear - you don't have a loadable udpsrc plugin
installed. Possibly you don't have it at all, or possibly you have a
version that requires a newer GStreamer. If it's the latter, then the
cause is you installing random sets of incompatible software - don't
do that.
