splitmuxsink in a dynamic pipeline deadlocks

The purpose is to have a live pipeline with the possibility of starting a
recording at a random time.

mp4mux requires the sink to be seekable, which doesn't seem to work with a
fakesink.
I assume changing the sink property would require a PLAYING->NULL->PLAYING
transition anyway.

I could try to do some testing with an output location going to /dev/null,
but seems a bit hacky.

Should it be a problem to change the sink on-the-fly?
