You cannot use 80x25 VGA text mode whilst using the i915 driver, full stop.
Somebody has to choose the mode at some point. On linux we push that to the
endpoints - either the system is already configured to run at a good mode by
the bios/uefi setup, or the display manager applies the user configuration. In
between, there is also the fbcon layer that can autoselect a mode, and if push
comes to shove, you can force the mode selection by X during its startup.</pre>
