There is a lot of things you can do to enhance the picture from the CFA
array, including color correction, noise reduction, etc. There is also
the problem of moiré that can be handled by different de-mosaicing
algorithm.

The only fact that CFA -> RGB is done by interpolation is a loss of
information. That why RAW files are still better than TIFF (RGB).
