I do not know about chinese fonts,  but in my debian machine, there are
some chinese fonts 

ttf-arphic-bkai00mp
ttf-arphic-bsmi00lp
ttf-arphic-gbsn00lp
ttf-arphic-gkai00mp

I'm not sure which font uses in evince.
