 As far as that sound shuddering thing goes, I found this "improvement" had
 already been reported at Debian.  http://bugs.debian.org/cgi-
 bin/bugreport.cgi?bug=522598  As per a comment there I changed:

 load-module module-hal-detect
 to
 load-module module-hal-detect tsched=0
 in
 /etc/pulse/default.pa

 Now it sounds fine I just get a bunch of:
 E: module-alsa-sink.c: ALSA woke us up to write new data to the device,
 but there was actually nothing to write! Most likely this is an ALSA
 driver bug. Please report this issue to the PulseAudio developers.

 Also I notice pulseaudio is automatically starting when I play a sound
 when its not running.  Kinda odd, but I guess thats ok.
