The documentation at 
http://pulseaudio.org/wiki/NetworkSetup#Usingatunnel
could do with a clarity/completeness update.

Specifically, it should contain at least a basic manual on setting up a
tunnelled connection for those uninitialised in the internals of PulseAudio.
