I suppose this has nothing to do with GStreamer. Can you reproduce this simpy
by muting and unmuting the sink with pactl? The command to use is
"set-sink-mute", see man pactl for details.

Changing "switch = mute" to "switch = on" is not a proper fix. "switch = mute"
means that the switch state should follow the sink mute state, so unmuting the
sink in pulseaudio should unmute the switch in alsa too.
