I don't know what simple-endpoint is, but I would guess that it's not
needed with bluez 4.

I think the problem is that you don't connect any of the audio profiles
of the bluetooth device. Just pairing is not enough. I don't know how to
connect the profiles from command line, so I can't give exact
instructions, but with e.g. Gnome 3 the profiles are connected when I
click on the bluetooth applet, click on the device name, and then toggle
the "Connection" on/off switch.
