[PATCH 11/14] drm/amd/display: refine the EDID override

[Why]
We already get the SBIOS EDID via ACPI on KMD,
but after that, we just use the monitor EDID to set it HDR caps

[How]
Make the SBIOS EDID override to read_edid()
That can change the read EDID caps from the right EDID
