Are you running a color management tool in the background?

The difference between my setup and yours is that there isn't anything locking
the connectors hundreds of times per second and performing full updates.

This is confirmed in your log by lines like the following:

 [ 2788.165907] [drm:drm_atomic_add_affected_connectors [drm]] Adding all
