I was talking to the AppStream maintainer just now and he suggested:

<provides>
<id>the-old-desktop-app.desktop</id>
</provides>

This also also makes reviews work when upstream "moves" or changes
company, e.g. com.hughski.ColorHug -> org.freedesktop.ColorHug.
