building font does not seem to ship fonts

Was this reported against the application itself?

It is very likely that this is an issue with the app, not Flatpak.

Considering that this is a rendering issue, it could have been that
something changed in the runtime that broke the application. You could also
attempt to run the application from the command-line specifying a different
runtime, this way you could bisect a regression (if any).
