Source Han Sans CN/TW are regional subsets that only contain characters from
the national charset, while Noto Sans *CJK* are completely covered copies of
Source Han/Noto CJK with a default of either CN or TW. (With a properly
lang-tagged document, either font will give the correct localized result.)
Consider adding the corresponding subset/full fonts: the full Source Han Sans
SC/TC for the Source side, and the Noto Sans SC/TC subset for the Noto side.

Regarding WenQuanYi Zen Hei: A few characters in this font can look out of
pretty awkward. Droid Sans Fallback's Chinese-ified version, WQY MicroHei has
better coverage and less screwups in terms of shape (there's not much to screw
up when you make glyphs of prefabricated pieces...), and hence it should be
preferred over Zen Hei in the list.

Maybe include Source Han Serif/Noto Serif CJK in the serif list too?
Subjectively speaking, I think these new stuff look better than SimSun and AR
PL. (Fallbacks can always work the rest out.) They have a nice bunch of font
weights, too.

Kai Ti can technically go into the cursive or script category, but only if
everyone thinks including cursive in 65-nonlatin is a good idea.
