gst-launch doesn't show all available command
line arguments, though the arguments themself
still work.

Looks like this:

>gst-launch --help
Usage:
  gst-launch [OPTION...] gst-run

Help Options:
  -?, --help           Show help options

Application Options:
  -p, --print          print wrapped command line options
  --gst-mm=VERSION     Force major/minor version
  --gst-list-mm        List found major/minor versions
