Any tags that aren't supported in gstreamer tag writing backend are deleted,
e.g. TCON (for composer), TCOP (for copyright), TENC (for name of encoder) when
rewriting using this element.

(This is also a problem with other plugins such as id3mux, bug #323658) 

What should happen is that any tags that gstreamer *doesn't* directly overwrite
should be left intact otherwise there will be data lossage.
