cairotextoverlay has the "font-desc" property which should be used for pango
font descriptions:

gst-inspect cairotextoverlay
...
  font-desc    : Pango font description of font to be used for rendering. See
documentation of pango_font_description_from_string for syntax.

That said, I'm not sure how you'd set the colour of your text with
cairotextoverlay. Maybe a file another bug requesting enhancements to
cairotextoverlay?
