GStreamer does detect a subtitle track:
$ gst-discoverer-0.10 /home/hadess/Desktop/Downloads/test.m4v

Not sure if it's supposed to be an actual subtitle track, but I've seen this in
a number of QuickTime encoded files, so it may need special handling.
