there is indeed something wrong, just doing matroskademux ! video/x-h264 !
fakesink results in the following output:

E (type: stream-start
E (type: caps
E (type: segment
E (type: tag
E (type: tag
E (type: segment
E (type: eos

with no buffers outputted
