3rd full patch GstDisparity

Addressed from before all the comments on adding critical section to manipulate
state changes etc.

And also now adapted the caps negotiation following Sebastian's comments: added
sink_query. Pls note that I moved the OpenCV-specific allocations into another
function initialise_disparity, so the handle_sink_event and (new) handle_query
functions are easy to spot.
