Another option is to make a series of tags for each format, like:

GST_TAG_MATROSKA_TRACK_NUMBER
GST_TAG_MATROSKA_TRACK_UID
GST_TAG_MATROSKA_TRACK_TYPE
etc.

I think it would be better if we could handle multiple formats in a consistent
way, but that's another option if it comes to that.
