this works, for example:

gst-launch-1.0 -e autoaudiosrc ! avenc_g726 bitrate=16000 ! matroskamux !
filesink location=g726.mkv

gst-launch-1.0 filesrc location=g726.mkv ! matroskademux ! avdec_g726 !
pulsesink
