jup, does your pipeline also stop working when you add an rtpjitterbuffer?
You may set the latency property of the jitterbuffer to zero.

I am interested in knowing if anyone is suffering from the this issue when:
- setting alsasrc provide-clock=false
- using an rtpjitterbuffer between udpsrc and alsasink
