For some reason those streams have two video streams (a mpeg2 one with no
frames, and a h264 one with the actual stream).

The reason you're seeing nothing at the beginning is because it's on the mpeg2
stream. When you abort the pipeline it switches to the h264 stream (notice how
videoconvert receives 720p video all of a sudden).
