ges-pipeline: Add the ability to use a custom encodebin

Add a property to use a custom element in place of encodebin.
Furthermore, if that element has a 'renderer' property, then
our urisink will be given to that property on the encoder bin.

That allows using splitencodebin in place of the standard
encodebin to render to split files.
