videotestsrc Will enable videometa option. If it does not, you should reject
the config in your pool (then the source will use another pool, leaving to your
element the task of copying).

Then yes, videotestsrc will pass a videoinfo from caps to frame_map, but
frame_map will update it's internal video_info from the VideoMeta. As your pool
is producing memory that has absolutely nothing special other then custom
stride, offset, alignment, the default map/unmap should do the right thing.
