It's been a while, but I've been using the caps as you suggested. Here they are
minus width/height/framerate:

video/x-bayer
      format: { bggr16, grbg16, gbrg16, rggb16 }
         bpp: {10, 12, 14, 16}
  endianness: {1234, 4321}

Another party has showed interest, so before we close this ticket I'll solicit
their feedback.
