FWIW, even with PulseAudio, we still need to set the caps on the stream to get
the expected output:

I can't really think of a reason why PulseAudio knowing that the device can
output 5.1, and PA advertising this, GStreamer couldn't deal with upmixing
itself.

Not an alsasink issue though, so let me know if you prefer dealing with this in
a separate bug.
