yes, multiple in to multiple out is not only possible, but an integral
part of the system.

Yes, GStreamer is used as the media framework of GPE
(http://gpe.handhelds.org/) and the company I work for, 
Fluendo, is helping for some customers of ours customizing
GStreamer for their upcoming embedded products.
