How about a simple video surveillance application.

This would take a video input stream from a webcam or some other input 
device and save only the video frames that show movement. There would be 
a main viewer application that would show each video stream under 
surveillance and reconfigure itself automatically as streams are added 
or removed. There would also be a handy play yesterdays events button 
that would launch a player which shows the changed video from each 
camera with a time stamp and camera location overlayed onto the video.

Or the more colorful version of this would be a live disk jokey style 
video mixing application. The idea here being that several cameras could 
be set up at a dance club and the disk jokey could use this application 
to mix and apply different effects to all the live video streams 
available for display on a large projection screen somewhere.... Better 
yet, the application could support two disk jokey video mixers mixing 
the same video streams simultaneously to be shown side by side in a 
video mix off tournament with the crowd selecting the winner...
