Andrés is actually working in packaging gstreamer for mac as part of
the OSSBuild build system.
You will find instructions in the README

The idea is to use macports with modified portfiles to be able to
reduce to the minimum the dependencies built (eg: remove GTK+ related
dependencies, which are usually provided with the gtk installer), plus
add some helper scripts to ease distributing the gstreamer
dependencies with your app, in a default path different from
/opt/local/.
