Can I have two sinks using the same chain function?

Could I then have them as request pads, explicitly create only one video sink
pad, and one text sink pad, and them put them in a collection? I was trying
to use the gstadder, but it has so many functions which I'm not sure they
are necessary or not, like: 

gst_adder_dispose
gst_adder_query
gst_adder_src_event
gst_adder_sink_event
gst_adder_request_new_pad
gst_adder_release_pad
gst_adder_change_state 
gst_adder_do_clip
gst_adder_collected
