Can you try again with the latest GIT version of cerbero from here:
http://cgit.freedesktop.org/gstreamer/cerbero/

Use the 1.2 branch ideally. Then wipe all your existing build state and
do
./cerbero-uninstalled -c config/cross-ios-universal.cbc bootstrap
./cerbero-uninstalled -c config/cross-ios-universal.cbc package gstreamer-1.0

If it still fails please paste the complete output of the build.
