Reording HD

Hi

I have an i7 intel core 2Ghz PC and would like to know what is the best encoding I can get with HD 1080p30.
Which codec should I use and which file format should I save to. What would the setting be to get good quality video.
I'm open to the format. I am clueless when it comes to encoding I have tried "avenc_mpeg2video" with default parameters and get bad quality.

P.S. I'm decoding a live HD H.264 stream from a camera and would like to record it. And Im working with Gstreamer 1.2.3 on windows 7.
