Actually if you do a non-flushing seek to the beginning after the
segment-done message it should work without any pad offset or segment
adjustments if I'm not mistaken. Worth trying :)

Also after segment-done your pipeline will go to PAUSED because the
sinks are not pre-rolled anymore, you need to set it to PLAYING again.
