Am newbie to video encoding. How do I understand what plugin does what and put together a pipeline

Pls Help. Everytime I use the gst-launch cmd to construct a pipelline and run, Iam getting some error or the other:

e.g., Could not multiplex stream --- filesrc for mpeg
OR
message too long -- with udpsink

etc...

I feel like a total dumbo on this , and am not sure where to start as searching the internet didnt yield anything that helps in understanding well these components.
