That looks like FFV1 isn't mapped/implemented in qtmux. Could you file a 
bug on bugs.gnome.org requesting this feature, produce shall be 
GStreamer and component gst-plugins-good. Provide information on 
GStreamer version you are using, for the rest these steps seems fair 
explanation of what you are trying to do.
