In case you video does not start at the beginning after a while, you should
set max-files=0 on hlssink (or max-files= ). Its default value is 10,
meaning it will start deleting files after 10 segments have been created.

I am not sure what is going wrong in case you mean that your hls video does
not start at the very first frame of the source video.
