Hi,

the old way is using gst-uninstalled

https://cgit.freedesktop.org/gstreamer/gstreamer/tree/scripts/create-uninstalled-setup.sh

the new way is gst-build

https://cgit.freedesktop.org/gstreamer/gst-build/

both works fine but you need an environment with build time dependencies 
installed (*-dev packages on most distros)
