setting pipeline to GST_STATE_PLAYING in callback fails

Found the issue. I've run it with gst_debug_set_default(GST_LEVEL_LOG) and
found it was an error in the path for filesink, which only shows as a
GST_LEVEL_WARN, not GST_LEVEL_ERROR.
