Sorry, working with a specific font requires selection of that font either
directly formatting the character/paragraph, or as you note inserting with
Special Character dialog with the font selected.

The signature glyph is by its nature a Special Character, that is the method
provided for interactive use. The alternative and some would argue correct way
would be to create a new Paragraph style using the glyph and use that to insert
your signature fully formatted (i.e. size, color, alignment, etc).
